We were tasked to build a martini with one important caveat - it had to be the driest martini possible. The latest in our collaborative series, the Triple Dry Martini utilises wood tannin and milk whey to create extreme dryness on the palate.

Our Co-Founder and Head Distiller Tim was excited to work with the Gimlet team, given their love for creating world-class martini experiences. 

"The brief was relatively simple - to make a martini that mimics the traditional version but without vermouth, no exceptions...pretty easy!" says Tim.

This was one of the trickiest requests we've ever received, and one of the most exciting results, the Triple Dry Martini is a celebration of classic flavour and martini innovation.

Our distilling team explored a range of different ingredients and combinations that create dryness in the mouth taking reference from wine making in the use of tannin extract. It was a lightbulb moment - suddenly we were achieving the mouth-puckering dryness that had truly evaded us.

Local Fleurieu Peninsula milk was clarified leaving only the whey; this process further balances the tannins and adjusts the pH of the final product, creting layers to the dryness whilst also adding palate weight and viscosity. 

Chamomile and orris root were included as individual distillates to add topline floral notes to the Triple Juniper Gin base that makes up the foundation of the martini.

Triple Juniper Gin was critical to creating the perfect platform for a flavoursome and well-rounded martini experience. It's our signature gin for a reason, it builds incredible classic cocktails.

 

 

Lachlan Bentley, Bar Manager at Gimlet is thrilled with the outcome, something that is sure to excited and delight the martini faithful. "We've never seen something so innovative in martinis," he says. "It contains ingredients that your wouldn't usually find in a dry gin martini but with impeccable balance and drinkability."

At Gimlet, the Triple Dry Martini is finished tableside, where it is poured into a frosted cocktail glass with zested citrus and a seasonal tincture as the final flourish.

The Triple Dry Martini is also available to purchase through the Never never website, or at premium retail stores meatsmith and Morning Market in Melbourne.
