We have created an Oyster Shell Gin in collaboration with the recently launched Society restaurant in Melbourne, one of Australia’s most exciting seafood dining experiences.

Oyster shell is an ingredient which delivers minerality and a subtle sea spray character to our gin. It’s a flavour supported by the carefully considered inclusion of other coastal ingredients such as Geraldton wax, salt bush and Tasmanian wakame.

Pacific oysters sourced locally from Kangaroo Island were used in the production of the gin after their contents were first used on site at our Distillery Door.

The oysters are first consumed before the shells are cleaned and added to the pot still. A little goes a long way with oysters, only a few dozen shells are required to convey the subtle flavour that is required in the overall run.

Their inclusion brings a brightness to the gin’s complexity and a savoury note that is essential in communicating the coastal character we wanted to demonstrate.

The gin will be launched in collaboration with Society in Melbourne, whose team helped guide the direction of the release to work alongside some of the venue's signature seafood dishes.

We love it dry with a lemon or grapefruit twist, obviously accompanied by a fresh local oyster where available.

For those partial to a gin and tonic, it works really well with Fever Tree Mediterranean tonic water and a lime leaf garnish. It’s the perfect example of a sophisticated, citrus-forward coastal highball.

Our Oyster Shell Gin is one of only a handful of oyster shell gins available globally and aims to be the house martini option in one of the country’s most exceptional new restaurants.
