This version adds Triple Juniper Gin instead and also includes lemon curd and egg whites for a fluffy twist on a gin sour.

It’s been the signature cocktail on the menu of a bar called Manchuria in Melbourne for a very long time (where our co-founder Sean used to work).⁠

60mL Triple Juniper Gin

20mL Lemon juice

15mL Sugar syrup

Egg white

Heaped teaspoon of lemon curd

Lemon twist to garnish


Step 1Add all ingredients to a cocktail shaker and vigorously shake to combine.
Step 2Add ice to the shaker and shake hard again to create chill and froth.
Step 3Strain into a ice cold large martini glass and garnish with a lemon twist.⁠
